Crab Tacos (Makes 8 servings)

For Tacos

8 Tia Rosa Flour Tortillas
3 tablespoons oil
½ medium onion, finely sliced
2 garlic cloves, finely chopped
14 ounces cooked crab or surimi (or ½ and ½ of each)
Salt and pepper, to taste
1 tablespoon granulated chicken broth
1 tablespoon oregano, crushed
1 tablespoon cilantro, finely chopped
½ cup red bell pepper, chopped
Chopped habanero pepper, to taste
Mayonnaise, to taste
2 avocados, sliced

For Salsa
¾ pound green tomatoes
1/3 medium onion
Serrano or jalapeño pepper, to taste
1 garlic clove
4 sprigs cilantro
Salt, to taste
1 tablespoon oil


Combine salsa ingredients in blender, then sauté mixture with 1 tablespoon oil. Season and set aside.

In a frying pan with 3 tablespoons oil, cook onion, garlic and crab, stirring well. Sauté for about 3 minutes. Season with salt, pepper, granulated chicken broth, herbs, bell pepper and habanero peppers.

Spread a bit of mayonnaise on each warm tortilla and fill with crab, salsa and avocado.
